Finca San Pascual sits in the high Andes around 1800 meters above sea level and was established by Sr. Pedro Echavarria in the 1980’s. The farm is unique in their cold-fermentation process, starting with drying the cherries in the shade and finishing them in electric silos at 40 degrees. Innovation drives Finca San Pascual and the result definitely shows in the cup!

This is a very clean natural coffee, free of a lot of the tannin-like funk that is typical of the process. Overall a fruit forward profile with fresh blackberry and blueberry, structured nicely with milk chocolate and graham cracker notes in the finish. The brightness is limey and tart and enhances as the coffee cools. This also makes a super tasty espresso!
