Lavender - Lime - Pomegranate - Honeycomb

Koke is a family owned washing station in the Yirgacheffe region of Ethiopia. Coffee is grown above and below the washing station (which sits on the side of a hill), peaking at around 1800 meters above sea level. Multiple steps of sorting occurs at Koke, starting from the moment the cherries are picked all the way until basically exportation. Size, ripeness and growing altitude are just a few of many factors that go into the meticulous separation process which lends to the cleanliness and complexity of this lot.

Overall the flavor profile is floral and citrus in nature. Bergamot and lemon oils emerge from the moment hot water hits the coffee grounds. The flavor is very much honeysuckle and lavender with subtleties of lemon zest, pomegranate and honeycomb.
