Ricardo Zelaya & family oversee operations at what we believe to be one of the finest farms in Guatemala - Finca Santa Clara. Dedicated to the craft of shade growing and carefully processing a handful of varietals of coffee, Zelaya and his team frequently receive high regards and rewards for the lots they produce. They've also taken the coffee processing one step further and offer both Honey and Natural processed lots from the farm. Coffees are picked ripe and processed promptly after sorting, perhaps the most overlooked aspect in the production cycle. 

Being a Natural processed lot we've come to expect a bit of fermented berry or cherry flavor in the cup - this coffee certainly is no exception. The wine/ferment notes by no mean overwhelm the profile, we still taste some nice blackberry and caramel undertones. The cooler the coffee gets the more it reminds us of a milk chocolate bar which rounds out the fruity profile nicely.
