Roger Mairena and his wife own the farm where this delicious lot of Natural processed coffee comes from. Roger grows mostly Bourbon and Caturra varietal coffee but also experiments with a Pache varietal (believed to be a mix between a Caturra and a Pache) which has won him awards in past harvests. The farm is especially eco-friendly - the water used for washing coffee comes from a stream which eventually flows into a pvc system which runs under the roots of trees in the area, essentially filtering the water with the earth itself rather than polluting nearby streams.

This is a great example of how clean and sweet a Naturally processed coffee can be. If you’re unfamiliar with the process, the coffee cherries are left to dry in the sun for an extended period of time, which in turn allows the natural sugars to ferment and greatly sweeten the coffee. The fermentation is easy to overdo and create tannic, sour flavors, but when the fermentation is spot on (assuming the green coffee was good to begin with) you open the door for delicious fresh fruit flavors you won’t taste in a washed coffee.

This coffee is loaded with fresh peach and lemon meringue notes right from the first sip. A nice white grape juice flavor starts to show up as the coffee cools, and the finish is like a sweet honeydew melon and an orange marmalade.
